background: none repeat scroll 0% 0% transparent;" class="yshortcuts" id="lw_1293208572_1"&gt;sweet potatoes&lt;/span&gt;&lt;br /&gt;2 cups sugar&lt;br /&gt;1 stick butter&lt;br /&gt;4 eggs&lt;br /&gt;2 tsp vanilla&lt;br /&gt;1 cup whole milk&lt;br /&gt;1/2 tsp salt&lt;br /&gt;Mix using stand mixer with wire whisk attachment to catch any sweet potato&lt;br /&gt;strings.  Place in casserole dish.&lt;br /&gt;&lt;br /&gt;Topping&lt;br /&gt;1 &lt;span style="cursor: pointer; background: none repeat scroll 0% 0% transparent;" class="yshortcuts" id="lw_1293208572_2"&gt;cup brown sugar&lt;/span&gt;&lt;br /&gt;1/3 cup melted butter&lt;br /&gt;1/3 cup flour&lt;br /&gt;1 cup chopped pecans&lt;br /&gt;&lt;br /&gt;&lt;span class="yshortcuts" id="lw_1293208572_3"&gt;Toast&lt;/span&gt; pecans in small amount of butter in small &lt;span class="yshortcuts" id="lw_1293208572_4"&gt;fry pan&lt;/span&gt;.&lt;br /&gt;Mix all topping ingredients and put on top of potato mixture.&lt;br /&gt;&lt;br /&gt;May refrigerate and cook when needed at 350 degrees until hot. Let stand at room temperature atleast 30 minutes for tomatoes to release its juices, tossing occasionally.&lt;br /&gt;&lt;br /&gt;Stir in pasta and other ingredients. It is popular during the Chinese New Year season.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;100 grams rolled oats&lt;br /&gt;125 grams corn flour&lt;br /&gt;250 grams all-purpose flour&lt;br /&gt;225 grams fine granulated sugar&lt;br /&gt;2 tablespoons custard powder&lt;br /&gt;2 tablespoons cocoa powder&lt;br /&gt;250 grams butter&lt;br /&gt;2 egg yolks&lt;br /&gt;1 tsp vanilla essence&lt;br /&gt;milk powder &amp;amp; icing sugar (3 parts milk powder : 1 part sugar)(I made do without this because I did not have any milk powder in the pantry and it was snowing outside so a trip to the grocery store was just too much trouble)&lt;br /&gt;&lt;br /&gt;Sift the dry ingredients together.&lt;br /&gt;Cream butter and sugar until light and fluffy.&lt;br /&gt;Add in vanilla essence and egg yolks. Mix well.&lt;br /&gt;Add in oats and flour and form into a dough.&lt;br /&gt;Roll dough out to about 1/4 inch thick. It is usually made in a flower shaped mold (&lt;span style="font-size:85%;"&gt;&lt;span style="font-size:78%;"&gt;Photo on the right belongs to &lt;/span&gt;&lt;span style="font-size:78%;"&gt;&lt;a href="http://kampungboycitygal.blogspot.com/"&gt;http://kampungboycitygal.blogspot.com&lt;/a&gt;&lt;/span&gt;&lt;/span&gt;), hence the name Kuih Kemboja (Kemboja is a type of fragrant flower)&lt;br /&gt;Well, since I do not have that flower-shaped mold, I used muffin pans instead.&lt;br /&gt;I found the recipe from &lt;a href="http://www.mykitchensnippets.com/2007/12/kueh-bakar.html"&gt;My Kitchen Snippets&lt;/a&gt; and modified it a little bit.&lt;br /&gt;&lt;br /&gt;Ingredients :&lt;br /&gt;1 cup sugar&lt;br /&gt;2 cups all-purpose flour&lt;br /&gt;1/2 tsp salt&lt;br /&gt;2 1/4 cups coconut milk&lt;br /&gt;4 large eggs&lt;br /&gt;2 tbsp melted butter&lt;br /&gt;1 tsp pandan paste + 1 cup of water (mixed together)&lt;br /&gt;sesame seeds&lt;br /&gt;&lt;br /&gt;Preheat oven to 325 F and grease the muffin pans lightly.&lt;br /&gt;Beat eggs and sugar until sugar dissolves, but not fluffy.&lt;br /&gt;Mix pandan paste, water into coconut milk. Sprinkle with salt.&lt;br /&gt;Microwave them for 3 minutes on high. Check. And microwave for another 2-3 minutes. Slowly add in some cold water (a tablespoon at a time). Knead until it forms into a dough.&lt;br /&gt;Set aside in the fridge for about 30 minutes.&lt;br /&gt;&lt;br /&gt;Curry puff filling:&lt;br /&gt;5 tbsp oil&lt;br /&gt;1 onion finely chopped&lt;br /&gt;1/2 tsp turmeric powder&lt;br /&gt;1 tsp chilli powder&lt;br /&gt;2 tsp curry powder&lt;br /&gt;1/2 cup diced chicken meat&lt;br /&gt;2 large potatoes (boiled and diced)&lt;br /&gt;1 tsp sugar&lt;br /&gt;1/2 tsp black pepper&lt;br /&gt;1/2 tsp salt&lt;br /&gt;&lt;br /&gt;Fry onion, add spices.&lt;br /&gt;Then add chicken and cook for about 5 minutes.&lt;br /&gt;Leave aside to cool&lt;br /&gt;&lt;br /&gt;Preheat oven to 375F&lt;br /&gt;&lt;br /&gt;Roll out the pastry dough into approx. 1/4 inch thick.&lt;br /&gt;I use a curry puff mold. Or you can cut the dough into circles.&lt;br /&gt;Place some curry chicken ingredients in the center and shape it into a puff, pinching the sides to seal.&lt;br /&gt;&lt;br /&gt;Place on a lightly greased baking sheet. It is sticky on the outside with the sweet sensation of oozing &lt;span style="font-style: italic;"&gt;gula melaka&lt;/span&gt; syrup inside. Gula Melaka (or Gula Jawa) is made from the sap of the coconut tree and boiled down into a golden brown paste. It is usually sold in tubes or in blocks, and tastes similar to brown sugar.&lt;br /&gt;&lt;span style=";font-family:verdana;font-size:85%;"  &gt;&lt;/span&gt;&lt;br /&gt;&lt;span style=";font-family:verdana;font-size:85%;"  &gt;Ingredients&lt;/span&gt;:&lt;br /&gt;&lt;span style=";font-family:verdana;font-size:85%;"  &gt;2  large sweet potatoes (boiled/steamed, peeled and mashed)&lt;br /&gt;2 cups glutinous rice flour&lt;br /&gt;3 tbsp pandan juice&lt;br /&gt;Warm water&lt;br /&gt;&lt;br /&gt;Filling:&lt;br /&gt;Chopped up gula melaka bits&lt;br /&gt;&lt;br /&gt;Coating:&lt;br /&gt;Freshly grated coconut (I use frozen grated coconut found in the Asian Grocery stores)&lt;br /&gt;&lt;br /&gt;Mix the mashed sweet potatoes, pandan juice and rice flour well. Add some water and knead until a stiff dough consistency is formed. Add more rice flour if needed.&lt;br /&gt;Form the dough into small balls. Make a well in the center and fill it with some gula melaka.&lt;br /&gt;Roll it up again into a ball, making sure the gula melaka is sealed well inside.&lt;br /&gt;&lt;br /&gt;Put the balls into boiling water. And marinate pork for atleast 48 hours.&lt;br /&gt;Prepare a deep baking dish (fill with 1/2 inch of water) , place a metal rack on top of baking dish.&lt;br /&gt;Place marinated pork on the rack and bake for 25 minutes on 400F. (save marinate for glazing)&lt;br /&gt;Take pork out and turn them over. Brush with marinate. And bake again for another 20 minutes.&lt;br /&gt;Repeat one more time.&lt;br /&gt;&lt;br /&gt;Take pork out and wrap in aluminum foil for about 20 minutes.&lt;br /&gt;Carefully remove foil and chop the Char Siu up into tiny pieces. (or chop in a food processor)&lt;br /&gt;&lt;br /&gt;In a hot skillet, add 1 tablespoon of oil. Add chopped Char Siu and green peas. And stir-fry for about 5  minutes.&lt;br /&gt;You may add 2 tablespoons of water if you feel it is too dry. And 1 tablespoon of kicap manis.&lt;br /&gt;Keep aside.&lt;br /&gt;&lt;br /&gt;Preheat oven 375F&lt;br /&gt;&lt;br /&gt;Prepare short-crust pastry. If I am in a hurry (or lazy) I usually buy the ready-made Pillsbury short-crust pastry.&lt;br /&gt;Roll it out, and using a round circle cookie cutter, cut a few circles.&lt;br /&gt;&lt;br /&gt;Place one teaspoon of Char Siu filling into the center of a circle. Place another circle on top. Press to seal. I use a fork to make the pattern all around. Fill with water. Sprinkle with some salt. Cover pot with tight-fitting lid. Boil.&lt;br /&gt;As soon as you get big bubbles                      and steam, take the pot off of the stove.&lt;br /&gt;Wait 30 minutes to let the eggs cook.&lt;br /&gt;&lt;br /&gt;Then, remove eggs using tongs into a bucket of ice water. Leave eggs to cool for about 15-20 minutes.&lt;br /&gt;Slowly crack the egg surface until the shell is cracked all over.&lt;br /&gt;Place the eggs back into the cold water for another 10 minutes to aid peeling.&lt;br /&gt;&lt;br /&gt;Then, peel the shell off.&lt;br /&gt;Place freshly peeled eggs into the fridge for about 30 minutes.&lt;br /&gt;&lt;br /&gt;Slice eggs into half.&lt;br /&gt;Squeeze yolks into a separate bowl.&lt;br /&gt;Mash the yolks with a fork.&lt;br /&gt;&lt;br /&gt;Mix in ingredients : (for a dozen eggs)&lt;br /&gt;1/2 cup light mayo&lt;br /&gt;2 tsp honey mustard&lt;br /&gt;2 tsp chives (optional)&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1/2 tsp black pepper&lt;br /&gt;&lt;br /&gt;Cut the tip of the ziploc bag. (turn chicken over half way during cooking)&lt;br /&gt;&lt;br /&gt;Put uncooked rice, chicken broth, ginger and marinated chicken slices in the rice cooker. Add a few spoonfuls of the marinate and stir.&lt;br /&gt;Cook rice. Blend until smooth.&lt;br /&gt;Pour egg mixture into dry ingredients. Stir well with a wooden spoon.&lt;br /&gt;Add in pecans.&lt;br /&gt;Spoon batter into muffin-pan cups (2/3 full).&lt;br /&gt;Bake in 400F for 20 minutes or until muffins are cooked.&lt;br /&gt;&lt;br /&gt;Topping:&lt;br /&gt;Spread chocolate topping over muffins.&lt;br /&gt;Sprinkle oreo crumbs.&lt;br /&gt;Melt starburst fruit chews in microwave. Shape it into a small carrot. (One starburst candy makes two carrots). Score sides of carrots with a knife and rub some cinnamon on it to make it look "dirty". Make a small hole on top of carrot with a toothpick. Also called "Ban Jian kuih".&lt;br /&gt;I got this recipe from &lt;a href="http://lilyng2000.blogspot.com/2007/05/ban-jian-kuih.html"&gt;Lily's blog&lt;/a&gt;, but I omitted the "lye water" (potassium carbonate &amp;amp; sodium bi-carbonate solution) and substituted it with water and white vinegar, and added brown sugar to the ingredients. Leave aside for 30 minutes (covered)&lt;br /&gt;&lt;br /&gt;Lightly grease a pancake pan or any 10 inch non-stick skillet. Set stove on medium low flame.&lt;br /&gt;&lt;br /&gt;Pour in all the batter and using the base of the scoop/ladle , spread the batter evenly around and to the sides of the pan. Cover pan.&lt;br /&gt;&lt;br /&gt;When bubbles are seen on the surface of the half cooked batter, sprinkle the peanut and sugar filling over. Mix well.&lt;br /&gt;Add milk and butter. Cook on top of stove until thickened. (about 30 minutes)&lt;br /&gt;Remove from heat. Add vanilla extract.&lt;br /&gt;Place in unbaked crust (Jiffy mix) and bake 30-40 minutes in 350F oven.&lt;br /&gt;&lt;br /&gt;For the meringue, I used Martha Stewart's recipe :&lt;br /&gt;2 cups sugar&lt;br /&gt;8 large egg whites (1 cup)&lt;br /&gt;3 drops freshly squeezed lemon juice&lt;br /&gt;&lt;br /&gt;Combine sugar, egg whites and lemon juice in a bowl of an electric mixer set over a pan of simmering water.
